Chef Ross Lewis of Chapter One, Chef Derry Clark of l’Ecrivain, both in Dublin, and Chef Mickael Viljanen of Gregan’s Castle in County Clare sat with us over a glass of Irish Whiskey and discussed their love of Irish food.
