A food and culture podcast by Chef Mark Tafoya of ReMARKable Palate Personal Chef Service in New York City. We celebrate food by exploring the culinary scene of NYC and the world, speaking with chefs, purveyors, farmers, and others who are PASSIONATE about what they eat. We travel the planet in search of the unique tastes and dishes that make each place special. ReMARKable Palate is a production of the Culinary Media Network.

I just listened to the show about The Flexitarian Diet. After watching The Oprah show with Michael Pollan and Alicia Silverstone, I've been eating a lot less meat, and kept hearing this word "Flexitarian." So now, I'm a vegan recipe junkie. It's really fun to hunt down these "new" ingredients, such as tempeh and seitan, and try them out. I've been cooking at least one new recipe each week, with most being winners and only a few that were not to our taste. My husband grew up on a lot of meat, but even he will gravitate to the butter bean pate if it is there, ha ha! One trick I'm using is that I made a batch of veggie burgers and froze them. While my husband eats his meat, I have one of those and then we share the vegetarian side dishes. I would love to try the black bean burgers you discussed on this show. Thank you. Amanda from Maryland
